Directions
- Combine all ingredients into a ziplock bag, setting aside a small amount of olive oil for step 4.
- Flatten chicken breasts with rolling pin or meat pounder.
- Optional - Let the chicken marinate for 30 minutes.
- Heat a skillet over medium-high heat and add oil.
- Cook chicken 4-5 minutes each side, or until chicken reaches an internal temperature of 165 F. Add rice to pan and let cook for 2 minutes. Then add 2 cups of water to skillet and bring to boil. Once boiling, cover and turn temp to low. Leave covered for 15 minutes.
