Ingredients
Directions
- Preheat the oven to 375°F (190°C) and grease an 8x8-inch baking dish.
- Place each chicken breast between two sheets of heavy plastic, such as resealable freezer bags, on a solid surface. Use the smooth side of a meat mallet to pound the chicken to an even thickness of about 1/4 inch. Season both sides with salt and pepper.
- Place 4 asparagus spears down the center of each chicken breast. Spread about 1/4 cup of mozzarella cheese over the asparagus. Roll the chicken around the asparagus and cheese to form a compact roll. Place the rolls seam-side down in the prepared baking dish and sprinkle each with about 2 tablespoons of bread crumbs.
- Bake in the preheated oven for about 25 minutes, or until the juices run clear when pricked with a fork. An instant-read thermometer inserted into the center should read at least 165°F (74°C).
