  1. Preheat the oven to 400F and grease pan with coconut oil.
  2. In a large bowl, mash the bananas with a fork. Stir in the melted coconut oil.
  3. Add the salt, baking powder and soda, flours and oats. Mix well until combined.
  4. Distribute the batter. Bake for 18 to 20 minutes until the tops are brown. All the muffins to cool completely in the pan, then place 2 muffins in each meal prep container.
  5. To make Banana Bread Loaf, double the ingredients and bake in a 9x5 loaf pan at 375 for 40 minutes.
