- 1. Prepare a cool oven 325 deg. f or gas mark 3. Brush a 18cm cake tin with melted fat. Line the base and side with greaseproof paper, then grease the paper. 2. Cream the margarine and sugar together in a bowl until light and fluffy. Beat eggs and add gradually, beating well after each addition. Fold in flour with a metal spoon; add 1 tbsp milk and mix lightly. 3. Place spices and custard powder in a bowl. Measure black treacle carefully leveling off spoon; add to spices in bowl. Add one-third of the cake mixture; mix lightly until well blended. 4. Place alternate portions of plain and spiced mixture in prepared cake tin. Lightly stir mixture with a metal spoon; level top of the cake mixture. Bake in centre of oven for 1 to 1.5 hours. Test by pressing with the fingers, if cooked the cake should spring back, have stopped bubbling and begun to shrink back from the sides of the tin. Leave to cool in the tin for 10 minutes; turn out, remove paper and leave to cool completely on a wire rack. 6. To make the frosting: Sieve icing sugar into a bowl. Place the butter and sugar in a medium-sized saucepan over a low heat. Stir with a wooden spoon until the mixture boils. Remove from heat; stir in 2 tbsp milk and vanilla essence. Add to icing sugar in bowl; beat until smooth. 7. Spread frosting over top and sides of the cake; swirl with a round-ended knife. Leave in a cool place to set.
