- Place meat in smoker fat side up. Smoke & Grill over hardwood and mesquite until done. Several hours, watch internal temperature toward the end and do not over cook.
- Remove from heat and wrap tightly in foil. Let rest at least 30 minutes. Keep wrapped until ready to serve.
