  1. marinate brisket in some salt and all lime. Make a rub of the other ingredients. Rub thoroughly
  2. Place meat in smoker fat side up. Smoke & Grill over hardwood and mesquite until done. Several hours, watch internal temperature toward the end and do not over cook.
  3. Remove from heat and wrap tightly in foil. Let rest at least 30 minutes. Keep wrapped until ready to serve.
  4. Serve with BBQ sauce of your preference.
