Directions
- slice the flank steak across the green into quarter inch thick slices on an angle to make thin planks.
- place the steak in a shallow bowl and add baking soda, soy sauce, brown sugar, cornstarch and a third of the vegetable oil. massage all the ingredients into the meat to combine. Set aside until ready to use or you can cover and refrigerate for a few days.
- heat a walk or large skillet over high heat until you see the first wisp of white smoke. add a third of the oil, the ginger and the garlic. stir fry for about 15 to 30 seconds.
- adding the beef, spreading it out. Cook on disturbed for 30 seconds to a minute, letting the beef brown. then stir fry for 1 to 2 minutes until brown but slightly rare.
- add the remaining oil with the noodles, spreading around to cover as much surface area as possible. Cook undisturbed for 30 seconds or until slightly crisp.
- add the bean sprouts and stir fry for another minute.
- add the oyster sauce, soy sauce and brown sugar and stir fry for 1 to 2 minutes, or until heated through and will combined.
