  1. In a large pot or Dutch oven, sauté the beef and salt on high heat until browned, breaking the meat into small bits, about 10-12 minutes. Add the onion, celery, and carrots, and sauté for another 3 to 4 minutes.
  2. Add the tomatoes, beef broth, and bay leaf. Cover and cook on low heat until the beef and vegetables are tender, about 1 to 1 1/2 hours. Add more broth or water if it evaporates too much.
  3. Add the pasta, stir, and cook according to package directions. Serve with Parmesan cheese on top.
