- Preheat the oven to 400°F/200°C/gas 6. Wash and trim the beets and wrap them in foil. (Depending on the size of the beets, you can put three or four together in foil packages.) Place them in a shallow roasting pan and bake for 45 minutes to 1 hour, until they feel soft when pierced through the foil with a fork, but are still firm enough to be grated. Remove from the oven, open up the foil packets, and let cool. Slip off the skins (they should rub off easily) and grate the beets coarsely. Put the beets in a large bowl. Peel and coarsely grate the apple and add to the beets. Mix together the horseradish, sour cream, and lemon juice in a small bowl and season with salt and pepper. Toss the beets and apples with the dressing. Keep chilled and covered until serving.
