  1. Heat the oven to 350°F. Wrap the tortillas in foil and warm until pliable, about 10–15 minutes.
  2. Warm the oil in a large nonstick skillet over medium-high heat. Add the chopped onion and cook, stirring, until golden, about 5–6 minutes.
  3. Stir in the cumin and chili powder and cook until fragrant, about 20 seconds. Add the bell pepper, corn, and grated carrot; sauté until almost tender, about 4–5 minutes.
