Directions
- Put everything except the last three ingredients into a blender. Blend until totally combined but don't over blend. You want the batter to be thick. Gently stir blueberries into batter.
- Heat a non-stick pan on medium. Spray with cooking spray and pour batter in pan to make small silver dollar pancakes. Cook until golden brown on the bottoms then flip. We made two at a time
- Serve with a dollop of syrup and butter and guard your plate from family and roommates and pets.
