Directions

  1. Rinse and drain the lentils. Place them in a nonstick pan with a lid and add 2 cups of water to cover by about 1 inch.
  2. Stir in the turmeric, garlic powder, salt, and pepper. Bring to a gentle simmer over medium heat, cover, and cook for about 20 minutes, checking occasionally to ensure there is ample water.
  3. Uncover and add the frozen spinach (no need to thaw). If the pot looks dry, add enough water to just cover. Cover again and simmer for 15 minutes.
  4. Uncover, stir, and continue simmering until most of the liquid has evaporated and the lentils are tender, 5–10 minutes more. Taste and adjust salt and pepper.
  5. Serve warm.
