  1. Slice chicken into bite sized strips. Heat a skillet coated with cooking spray over medium-high heat. Cook chicken drizzled with liquid smoke for 7-10 minutes or until cooked through and no longer pink; set aside.
  2. In a large bowl, combine the chicken, grated carrot, apples, parsley, onion and lime juice. Stir well with wooden spoon to combine. Set aside.
  3. In a small bowl combine mayo, Greek yogurt, salt, and pepper. Taste and adjust the seasoning. Add to the chicken and stir until well until combined and coated. Adjust seasoning, if needed.
  4. Serve chilled!
