  1. Preheat oven to 375 F. Lay bottom pie crust in a 9 inch pie pan. Use half the ham to create a layer 2 slices thick, overlapping to cover all gaps possible. Add the eggs either scrambled or not. Add the onion, red pepper, and Parmesan cheese. Add the rest of the ham to create the same kind of layer as before. Cover with the remaining pie crust. Trim the excess pie crust. Use a fork to press and seal the edges. Place in oven and bake for 30 minutes. Serve warm.
