Directions

  1. Slice avocado and set aside.
  2. Heat olive oil in a small pan over medium heat.
  3. Chop pepper and Canadian bacon and sauté until peppers begin to get tender.
  4. Crack an egg into the pan and mix around.
  5. Let cook without stirring or mixing for about 5 minutes until egg has no translucency.
  6. Add shredded cheddar and fold egg mixture in half over the cheese.
  7. Once cheese has melted slide the omelet onto a plate and enjoy!
