Directions
- Blend cauliflower florets in a food processor until they resemble small grains of rice. Set aside.
- Heat a wok or large skillet over medium-high heat. Add 1 tablespoon of sesame oil and diced chicken. Sauté for 4-5 minutes, tossing throughout.
- Push chicken to one side of the pan. Add onion and mixed vegetables, adding more sesame oil if needed. Sauté for 4-5 minutes.
- Push mixture to the edges of the pan. Add the remaining sesame oil to the center, then add the egg. Scramble and cook just until set.
- Add in the cauliflower rice. Toss everything together and cook for 2-3 minutes. Season to desired taste and serve with soy sauce.
