  1. Preheat the oven to 350F. Line a 9x5 inch baking pan with parchment paper. Set aside for now.
  2. In a large mixing bowl, combine all-purpose flour with baking soda and yeast.
  3. In a medium mixing bowl, whisk together the egg with monk fruit sweetener and stevia. Whisk in 1 cup of pre-brewed chai tea, vanilla extract, and greek yogurt until combined.
  4. Pour the wet ingredients into the dry ingredients, and mix until just combined.
  5. Pour the batter into the loaf pan, cover, and let sit for 20 minutes.
  6. In a small bowl, whisk together cinnamon, 1/8 cup monk fruit sweetener, nutmeg, allspice, ginger, cardamom, and 1/4 cup of chai tea. Set aside.
  7. In a small saucepan, on medium heat, mix remaining monk fruit sweetener, chai tea, and a cup of apples. Cover and wait for apples to soften, stirring occasionally.
  8. Roll out dough, and pour spice mixture evenly accross. Spread apples accross evenly, roll up dough, and place back in pan. Let sit for 10 minutes.
  9. Bake the chai spiced apple loaf cake in the oven for about 40-50 minutes, checking periodically. Insert a toothpick into the center. If the toothpick comes out clean, it is ready. Allow the bread to cool for several minutes before slicing.
