  1. Bring a skillet sprayed with nonstick spray to medium-high heat. Add beef and seasonings. Cook and crumble until fully cooked, about 4 minutes. Transfer to a bowl, and stir in ketchup and mustard.
  2. Top half the tortilla with the beef mixture, cheese, tomatoes, and pickles. Fold in half.
  3. Clean skillet, if needed. Re-spray, and bring to medium heat. Cook quesadilla until crispy, about 4 minutes, flipping carefully halfway through.
