Directions

  1. Chop scallions; set aside. Scramble eggs in a bowl; whisk in scallions. Heat a pan over medium heat and spray with non-stick spray. Pour eggs into pan and use a rubber spatula to continuously move eggs around the pan. Once they are mostly cooked through, but still soft, add cheese to the pan. Continue scrambling until the eggs are cooked through to desired doneness.
  2. Move to plate and season with salt and pepper, to taste. Enjoy!
