  1. Cut chicken into bite sized pieces. Slice carrots, cut potatoes on medium dice. Heat oil in a medium saute pan over medium-high heat. Add chicken and saute until no longer pink and juices run clear. Add potatoes and carrot, saute for 1 minute. Add jar of curry sauce and 1 cup of water. Simmer, partially covered for 20-30 minutes. Serve over jasmine rice or cauliflower rice.
