- Thinly slice green bell pepper. Halve and thinly slice onion. Slice mushrooms. Split bread horizontally and cut crosswise into 4 pieces.
- Preheat oven to 425.
- Season chicken with garlic powder, 1/4 tsp salt, and black pepper.
- Heat skillet over high. Spray skillet with oil. Add half of the chicken, don’t overcrowd pan. Cook until browned 1 min. Turn chicken over and cook second side for 1 min. Transfer to large dish (plate or something)
- Add 1/2 tsp oil to skillet. Add bell pepper and onion. Season with pinch of salt and pepper. Cook 1 min, stir, then cook until onions golden and browned 4-5 min. Transfer to plate of chicken
- Reduce to medium. Add 1/2 tsp olive oil to skillet. Add mushrooms. Season with 1/8 tsp salt and pinch of pepper. Cook until mushrooms slightly browned on one side 1-2 min.
- Turn mushrooms over and cook until soft 1-2 min. Transfer to plate of chicken, onions and peppers
- Divide chicken and vegetables evenly among the bottom halves of bread. Top each with slice of cheese. Place sandwiches on baking sheet
- Heat sandwiches in oven until cheese melts 2-3 min. Remove from oven and close sandwiches
