  1. Thinly slice green bell pepper. Halve and thinly slice onion. Slice mushrooms. Split bread horizontally and cut crosswise into 4 pieces.
  2. Preheat oven to 425.
  3. Season chicken with garlic powder, 1/4 tsp salt, and black pepper.
  4. Heat skillet over high. Spray skillet with oil. Add half of the chicken, don’t overcrowd pan. Cook until browned 1 min. Turn chicken over and cook second side for 1 min. Transfer to large dish (plate or something)
  5. Add 1/2 tsp oil to skillet. Add bell pepper and onion. Season with pinch of salt and pepper. Cook 1 min, stir, then cook until onions golden and browned 4-5 min. Transfer to plate of chicken
  6. Reduce to medium. Add 1/2 tsp olive oil to skillet. Add mushrooms. Season with 1/8 tsp salt and pinch of pepper. Cook until mushrooms slightly browned on one side 1-2 min.
  7. Turn mushrooms over and cook until soft 1-2 min. Transfer to plate of chicken, onions and peppers
  8. Divide chicken and vegetables evenly among the bottom halves of bread. Top each with slice of cheese. Place sandwiches on baking sheet
  9. Heat sandwiches in oven until cheese melts 2-3 min. Remove from oven and close sandwiches
