Directions
- Spray inside of crockpot with olive oil spray. Place 3 chicken breasts inside crockpot, season with taco seasoning mix and set the cooking time for 4 hours on high.
- When the chicken is done cooking, use an electric mixer to shred the chicken in the pot.
- Turn on the stove to medium high, spray with olive oil spray, and place tortilla in pan. Put 1 cup of shredded chicken on one half of the tortilla and 1/4 cup of cheddar cheese on the other half. Flip the tortilla closed and heat until cheese is melted and tortilla is golden.
- Top quesadilla with homemade or storebought pico de gallo. Enjoy!
