- steam spinach finely chop, set aside
- mix half a can of green chilis, tbs green sauce and sour cream
- using tortillas, stuff with chicken, spinach, onions, 1 tsp green sauce and splash of cheese. roll and fill a baking pan with enchiladas.
- preheat oven to 350
- slather sour cream mixture over enchiladas
- bake for 1 hour at 350. remove is sour cream mixture starts to brown.
