Directions
- FOR THE RICE
- Cook enough rice to yield 2 ½ cups of cooked rice. 1 cup of dry rice will make around 3 cups of cooked rice.
- FOR THE CHICKEN
- Heat a grill pan or skillet over medium high heat. Add oil and cook the chicken for 3-5 minutes on each side or until cooked through. Cut it into slices.
- Wash and cut your potatoes into a large dice. Heat a pot of water over high heat and boil the potatoes until they are soft.
- Cut the onion and pepper into strips.
- In a skillet heat some olive oil over medium heat. Add the garlic, onion, and peppers. Cook for 2-3 mintues.
