  1. Preheat oven to 350 degrees. Spray muffin tin foils with a nonstick cooking spray or use a silicone muffin tin pan. Grind the oatmeal in a blender until it's flour-like consistency. Combine the ground oatmeal and all other dry ingredients in a large mixing bowl and mix. Pour egg whites and Greek yogurt and whip by hand with a wire whisk until smooth.
  2. Divide mixture evenly between the tins. Bake for 15-20 minutes or until toothpick comes out clean. These muffins do not have preservatives so they need to be eaten immediately or stored in the refrigerator (3 days) or frozen in your freezer (longer-term).
