Honey

Directions
- Mince the garlic and finely chop the scallion.
- In a small saucepan, boil the cider, ginger, garlic, soy sauce, vinegar, and honey until reduced to about 1/4 cup, approximately 10 to 12 minutes. Allow to cool completely and reserve 2 tablespoons of the glaze for drizzling.
- Preheat the broiler.
- Pat the lamb chops dry and sprinkle with 1/2 teaspoon of salt. Arrange on the rack of a broiler pan and brush the top of the chops with half of the glaze. Broil 3 to 4 inches from the heat for 3 minutes.
- Turn the chops over and brush with the remaining glaze, then broil for an additional 3 to 4 minutes for medium-rare. Transfer the chops to a plate, drizzle with the reserved glaze, and let stand for 5 minutes. Sprinkle with scallion before serving.
