Ingredients

  • Wheat flour

    White, cake, enriched

    2 cup unsifted, dipped or 274g

  • Baking powder

    Leavening agents, double-acting, sodium aluminum sulfate

    ¼ cup or 50g

  • Egg

    Whole, fresh eggs

    2 large or 100g

  • Butter

    Unsalted

    ¼ cup or 57g

  • Vegetable oil

    Natreon canola, high stability, non trans, high oleic (70%)

    ¼ cup or 56g

  • Reduced fat milk

    Fluid, 2% milkfat, with added vitamin a and vitamin d

Directions

  1. Oil the top and bottom grids of the waffle iron with some vegetable oil then preheat to medium-high.
  2. Whisk together the dry ingredients in a large bowl.
  3. In a separate bowl, separate egg whites and beat until stiff peaks form.
  4. In a large 4 cup capacity liquid measuring glass, mix together the egg yolks, milk, butter, oil and vanilla, stir until completely combined.
  5. Add the egg mixture to the dry ingredients and mix well.
  6. Fold in the egg whites until just combined, trying not to over mix.
  7. Cook in the waffle iron on medium-high heat OR on the setting that says Belgian waffles/waffles for around 5-8 minutes. The waffles should be very golden brown on the outside.
  8. If needed, oil the waffle iron between waffles using a basting brush with oil.
