Directions

  1. Zest the lime and squeeze out all of the juice. Set aside.
  2. Head coconut oil and butter in a large skillet over medium-high heat. Cook and stir rice and coconut flakes for 3-4 minutes until coconut is barely toasted.
  3. Stir in the lime juice and zest, then addd the coconut milk, and water.
  4. Bring to a low boil, then cover and reduce heat to low. Cook for 20 minutes.
  5. Remove from heat, fluff with a fork, and season to taste with salt and pepper.
