  1. *Bring 4 quarts water to boil in large pot. *Add noodles and salt and cook, stirring often, until tender. *Drain noodles, rinse with cold water, and drain again, leaving noodles slightly wet. *Transfer to large bowl and toss with oil.
  2. *Whisk soy sauce, MIRIN, sugar, ginger, and wasabi together in small bowl, then pour over noodles. *Add radishes and green onions *Toss until well combined. *Sprinkle individual portions with nori and bonito flakes, if using.
