Directions
- Prepare quinoa according to package instructions.
- Slice tofu into 1/4 inch thick pieces. Place between paper towels on a cutting board, top with a baking sheet, and weigh down with a heavy object for 10 minutes to press out excess moisture.
- Thinly slice the red onion and soak in cold water to mellow its flavor.
