Ingredients

  • Soy sauce

    Soft, prepared with calcium sulfate and magnesium chloride (nigari)

  • Egg

    Whole, fresh eggs

  • Scallions

    Spring onions or scallions (includes tops and bulb), raw

  • Spinach

Directions

  1. Drain and cut tofu into small cubes. Chop scallions and spinach.
  2. In a large pot over medium-high heat, bring the soy sauce, diced tofu, and vegetable broth to a boil.
  3. Whisk the eggs in a bowl. Slowly pour the eggs into the boiling broth while continuously stirring to create egg ribbons.
  4. Place chopped scallions and spinach in the bottom of serving bowls.
  5. Ladle the hot soup over the spinach and scallions in each bowl and serve immediately.
