  1. Cook bacon in a large skillet over medium heat, turning halfway through, until browned and crisp, about 8–10 minutes.
  2. Meanwhile, use a cutter to punch out a circle in the center of each slice of bread.
  3. Transfer bacon to a cutting board and cut in half crosswise. Carefully pour half of the bacon drippings into a small bowl.
  4. Place the bread slices in the skillet and cook over medium-high heat until the bottom sides are golden brown, about 3 minutes.
  5. Crack an egg into each hole in the bread. Season eggs with salt and pepper and cook until the underside is set, about 2 minutes.
  6. Using a thin spatula, carefully turn both pieces of bread to briefly cook the second side, about 1 minute.
  7. Add 1 tbsp butter to the skillet and swirl to distribute, allowing some to get underneath the bread.
  8. Carefully turn the bread again. Top one slice with half of the cheese. Remove the pan from heat and let sit for about 1 minute to soften the cheese.
  9. Top with half of the bacon and some hot sauce. Close the sandwich and transfer to a plate.
