Directions
- Cook bacon in a large skillet over medium heat, turning halfway through, until browned and crisp, about 8–10 minutes.
- Meanwhile, use a cutter to punch out a circle in the center of each slice of bread.
- Transfer bacon to a cutting board and cut in half crosswise. Carefully pour half of the bacon drippings into a small bowl.
- Place the bread slices in the skillet and cook over medium-high heat until the bottom sides are golden brown, about 3 minutes.
- Crack an egg into each hole in the bread. Season eggs with salt and pepper and cook until the underside is set, about 2 minutes.
- Using a thin spatula, carefully turn both pieces of bread to briefly cook the second side, about 1 minute.
- Add 1 tbsp butter to the skillet and swirl to distribute, allowing some to get underneath the bread.
- Carefully turn the bread again. Top one slice with half of the cheese. Remove the pan from heat and let sit for about 1 minute to soften the cheese.
- Top with half of the bacon and some hot sauce. Close the sandwich and transfer to a plate.
