Directions
- Heat a large nonstick pan over medium-high heat. Add the eggs and scramble until just cooked through. Add the chopped onion and green pepper, season with paprika, cumin and salt, and cook until browned.
- Assemble the burritos: Spoon the guacamole and passata onto each tortilla, followed by the eggs, peppers, onions , beans, shredded cheese and hot sauce (optional). Fold in the sides of the tortilla over the filling and roll, tucking in the edges as you go.
- Lightly coat the pan with olive oil and set over medium heat. When the pan is hot, add the burritos, seam side down. Cook until the bottom of the burrito is golden brown, about 3 minutes. Flip the burritos over and continue cooking until golden, a few minutes more. Serve warm.
