  1. Preheat the oven to 350°F. Lightly grease a 9x13 inch baking dish.
  2. Place chicken breasts between two pieces of waxed paper. Gently pound with a meat mallet or rolling pin until about 1/4 inch thick, then remove the wax paper.
  3. Place 1 ounce of feta cheese in the center of each chicken breast, then fold in half.
  4. Spread 2 tablespoons of bread crumbs in the bottom of the prepared baking dish. Arrange the chicken in the dish and top with the remaining bread crumbs.
  5. Bake for 25 to 30 minutes, or until the chicken is no longer pink and the juices run clear.
