Directions
- For the marinade: Place all marinade ingredients (lime juice - cilantro leaves in list) in Vitamix container. Select variable speed 1. Turn the machine on and blend at variable 10 (high), blend for 30 seconds. Place the fish fillets in a shallow pan, pour the marinade over the fish and marinade in the fridge no longer than 30 - 40 minutes. For the dressing - place all dressing ingredients (Orange peel - cilantro leaves in list) in Vitamix container and increase speed to variable 6 and blend for 30 seconds. Pour the dressing into a squeeze bottle and set aside until serving. For Slaw - fill Vitamix with water up to the 4 cup mark. Add green cabbage (large chunks) to the container and secure lid. Select variable 6. Use on/off switch to pulse 4 times (quickly). Drain well and transfer to a bowl. Repeat for red cabbage (4 pulses) and carrot (6 pulses). transfer to bowl with green cabbage as you go. Wrap the tortillas in foil and put them in a warm oven until they're heated through. Remove fillets from the marinade and grill or pan-sear until cooked through. Fill each tortilla with about 1/4 cup slaw and portion of fish and 2 tbsp of dressing
