Directions
- Pat dry the scallops thoroughly with paper towels before cooking.
- Heat a large cast iron skillet over medium heat.
- In a medium bowl, toss the scallops with olive oil to coat. Season with salt, black pepper, red pepper flakes, and paprika.
- Add a small amount of butter to the hot skillet to coat the bottom. Add scallops without overcrowding and sear for about 2 minutes on each side until golden.
- Add remaining butter and garlic to the skillet. Remove from heat and stir the garlic into the butter for about 30 seconds.
- Squeeze lemon juice over the scallops, stir to combine with butter, and sprinkle with parsley and lemon zest.
- Drizzle with extra virgin olive oil before serving.
