  1. Pound chicken breasts to an even thickness of about 1/4 inch. Season both sides with salt and black pepper.
  2. Heat grill or grill pan to medium-high heat. Oil the grill grates and add the chicken. Grill for 2-3 minutes on each side, or until browned and the internal temperature reaches 165°F. Set aside to cool.
