Directions
- Mince shallot and saute with the minced garlic and spinach. Squeeze out excess water. Split the loin open and salt and pepper it. Mix the spinach mixture with the feta and spread on the open loin. Close up and lay strips of bacon across it and tie with butcher twine. Bake at 350 until internal temp is 165. Broil to crisp up the bacon.
