- Preheat oven to 375F with rack in middle. Lightly grease quiche dish with non-stick spray.
- Saute spinach in a non-stick pan with a sprinkle of water to help steam. Drain, let cool. Squeeze out excess liquid.
- In the same pan, sauté onions with ham in butter, stirring occasionally, until pale golden, about 5 minutes. Add spinach and stir together.
- Spread spinach mixture in dish, then evenly sprinkle cheese on top.
- Whisk together eggs, milk, and 1/2 teaspoon pepper and pour over cheese.
- Bake until top is golden and custard is set in center, 20 to 25 minutes. Cool slightly before cutting into wedges.
