- Slice potatoes into 1/4 inch long sticks. Make sure the sizes are uniform to ensure even cooking. Soak fries in cold water for 30 minutes or up to overnight to remove starch.
- Preheat oven to 425F. Line baking sheet with parchment paper.
- Drain fries and rinse. Blot dry with kitchen towel.
- Add fries into large bowl and drizzle evenly with oil. Toss until they are evenly coated.
- In a small separate bowl whisk together the corn starch, garlic powder, smoked paprika, and black pepper until combined. Sprinkle the mixture evenly into the fries and toss until the fries are evenly coated and the cornstarch has soaked into the oil.
- Spread the fries out in an even layer on the prepared baking sheet. Be sure fries aren’t overlapping or else they will not cook evenly. Use two baking sheets if needed.
- Bake for 15 minutes. Then remove pan from over and take some time to flip each fry over and rearrange to make sure none is overlapping. Bake for another 10-15 minutes or until the fries are crispy and have begun to brown on the tips.
- Transfer the baking sheet to a cooling rack and sprinkle with salt to taste.Let the fries rest for 5 minutes. Serve warm.
