- Preheat oven to 350 degrees. Line a 9x5 loaf pan with foil to make clean-up easier.
- In a large mixing bowl, combine ground turkey, onion, egg whites, picante sauce, oats, soup mix, and pepper til mixed together.
- Press into foil-lined loaf pan. Smear ketchup over the top. Bake in preheated oven for 70 minutes. When forked, juice at center of meatloaf should run clear.
- Take it out of the oven. Let it rest for 15 minutes. Remove the meatloaf including the foil from loaf-pan and slice into 1.5 inch slices.
- Slicing trick: remove the first slices to eat with dinner. Refrigerate the rest. Then when ready to serve for another meal, slice 1.5 inch slices OR slice thinner for meatloaf sandwiches. Two thinner slices fit a piece of bread nicely.
