- Allowing for two skewers per person, thread two prawns and two pieces of salmon onto each skewer and set aside.
- Cook the soba noodles in a pot of boiling, salted water for 4 minutes, or according to packet instructions. Drain and set aside.
- Whisk all the dressing ingredients together in a bowl. Place half of the dressing in a large bowl, along with the cooked soba noodles and vegetables ribbons. Gently toss to coat and set aside.
- Heat a non-stick frying pan to a medium heat. Place the seafood skewers in the pan and cook for 2 minutes. Turn over and drizzle on the remaining dressing. Continue to cook for a further 2 minutes, turning occasionally to avoid burning.
- Divide the dressed noodle salad between two bowls and place the skewers on top. Serve with a lemon wedge and a sprinkle of sesame seeds.
