- 1. In a large pot brown the Italian sausage. When browned remove from pot into a strainer. Leave about a tbsp of grease in the pot.
- 2. Place 1 cup of chopped onions and 2 tsp of minced garlic into the pot until golden.
- 3. Add in 2 containers of beef broth, 1 cup of water, 1 cup of sliced carrots (ensure not to slice too thin), sausage, 1 tsp of basil, and 1 tsp of oregano. Bring to a boil then reduce heat to a simmer. Cook uncovered for 30 minutes.
- 4. Add in zucchini, 3 tbsp of Italian parsley, 1 medium green bell pepper, and the bag of tortellini. Simmer covered for 30 minutes.
- Sprinkle in mozzarella cheese to taste.
