- Grate on cheese grater or rice cauliflower in food processor. Squeeze/press moisture out of cauliflower in cheese cloth or paper towel.
- Process chicken in to rice form in the food processor. Be careful not to over process.
- Combine 4 oz mozzarella, riced cauliflower, chicken, egg, and spices in mixing bowl. Reserve the other 3 oz of mozzarella for topping
- Line a baking pan with parchment paper. A pizza pan with holes is recommended. Oil lightly.
- Pour mixture from bowl in to middle of baking pan. Press from the middle outwards, forming in to a crust. It should make enough for a 12" pizza at least.
- Bake at 375 degrees for 14 minutes, or until it has begun to brown on the top.
- Remove and allow to cool slightly.
- Top with sauce, cheese, and pepperoni.
- Return to the oven at 400 degrees for another 14-15 minutes.
