- Heat oil in a frying pan. Add curry paste and onion and cook together over a medium heat for 3-4 minutes stirring regularly until the onion begins to soften.
- Add the mango chutney, tomatoes and water and increase the heat. Bring to a simmer. Leave to bubble for 5 minutes stirring occasionally.
- Scatter over the prawns and spinach leaves. Stir fry for 2-3 minutes or until prawns are heated through and the spinach softened.
