Ingredients

Directions

  1. This comes together pretty fast – most of the work is prep work. To Prep: 1. Cut up lamb 2. Chop cauliflower (I did in my food processor in batches) 3. Slice onion and mince garlic 4. Cut up carrot. 5. Chop cilantro 6. Combine spice mix in small bowl. To cook: In a large skillet, heat olive oil and butter over medium heat; add onions and cook until onions have softened. Add garlic and spice mix and cook 1 minute longer. Add lamb and yogurt, stir to combine. Mix in cauliflower, chicken stock and raisins. Cover and cook on medium heat about 15-20 minutes, until cauliflower is cooked but not mushy. Stir in carrot and cilantro and serve.
