Directions
- Evenly coat chicken in oat fiber. Heat oil and ghee in large skillet over medium-high heat. Add chicken, and season with salt and pepper. Cook 3 minutes, stirring occasionally, until browned (safe internal temp 165F). Add shallot; cook 2 minutes. Add garlic; cook 1 minute.
- Pour reserved marinade into skillet to deglaze, scraping any browned bits from bottom of pan. Cover and cook 2 minutes until sauce starts to thicken.
- Add water, artichokes, oregano, and lemon zest and juice to skillet. Cover and cook 2 minutes. Add greens; cover and cook 2 minutes more. Stir well and serve immediately. Refrigerate leftovers.
