Directions
- Heat olive oil over medium heat in a medium sized saucepan.
- Once shimmering add chopped carrots and onions, and sauté until onions are translucent (about 5 minutes).
- Add spices and garlic and mix for half a minute until fragrant.
- Add tomatoes and cook for 5 minutes.
- Add water, chicken stock, and lentils, and increase heat to high for boiling.
- Once boiling, place lid on pan and decrease heat to low for simmering.
- Simmer for 15-20 minutes, or until lentils are soft.
- Chop spinach and add to mixture.
- Serve with cottage cheese.
