  1. This first step of Milk is optional (It reduces the strong taste of the liver)
  2. Soak liver in milk or buttermilk to reduce the strong taste of the meat
  3. Remove the liver from liquid and pat dry
  4. Heat a large cast-iron skillet over medium-high heat. Add oil. Add garlic and sauté until fragrant, stirring constantly to avoid burning. About 1 – 2 minutes.
  5. Add the liver and fry until browned on both sides
  6. Season with salt and pepper to taste.
  7. Add the remaining tablespoon of oil and the butter in the same skillet. Add onions and sauté until translucent and fragrant.
  8. Add the liver back and cook for 2 – 3 minutes.
