- Dice the green pepper and onion. Mince the garlic. Toss with olive oil and salt and pepper to taste. Spread on a parchment-lined baking sheet and broil on high for 10 minutes until blackened.
- Remove seeds from the ancho chili and cut into pieces. Toast with oregano, cumin, and ground chipotle chile powder in a dry saucepan over medium heat for 3 minutes. Add tomatoes and their liquid, water, and apple cider vinegar, and simmer for 10 minutes.

- Thinly slice the red cabbage and radishes. Chop cilantro. Cut limes into wedges. Peel and dice the avocado.
- In a skillet, melt butter and cook eggs until whites are set. Repeat for remaining eggs.
- To serve, place a warmed tortilla on a plate. Top with an egg, tomato sauce, cabbage, radishes, cilantro, avocado, and cheese. Serve with lime wedges to squeeze over top.
