  1. In a medium sized bowl, combine all ingredients, except for 1 egg. . Mix until well blended. Put mixture into a piping bag. On a flat surface, lay wrappers out only 2 at a time. Keep unused wrappers covered so they don't dry out, Pipe mixture onto wrapper, then roll up tightly leaving 2 inches of wrapper edge. Using remaining egg, brush edge of wrapper with egg wash, Finish wrapping the Lumpia up, Continue in this way until all Lumpia have been rolled up. Fry in deep hot oil. Drain on paper towels. Transfer to a serving platter. Serve with your favorite Sweet and Sour Sauce recipe.
